iPhone 3Gs stuck updating to iOS 5.1.1

My Mom's iPhone 3Gs is stalled updating to iOS 5.1.1 from iOS 5.1. I let it sit overnight and still no progress has been made. At the top of the iTunes window it just says "Updating iPhone software..." and the progress bar is filled maybe a few percent.

What are my options here? Will it be my best bet to unplug it and try to restore the phone? Or will unplugging it brick the phone?

Unplug it and put it in DFU mode. Try and restore from there.
