I upgraded iOS on my iphone4 (Verizon) last night to 6.1.3.
The previous one was version 5 (not sure of the exact number)
I did do a back up before the upgrade using iTunes.

After upgrade, I noticed that I am having much slower connection to wifi and 3G (plus I don’t like the new youtube app)

I want to try to go back to the older iOS

I think if I do RESTORE FROM BACK UP, that will only affect photos, contacts, etc, but not the iOS itself.

If I do RESTORE, will it go back to the “factory” setting,, including reverting back to the older iOS?
Then, I can just put back the photos, contacts, etc using Restore from Backup

Also, if I restore the Apps from iTunes, will it put back the previous version of youtube?

You can not downgrade to a previous version of iOS.

Only way is through jailbreaking which requires you to have save your iOS 5 shsh blobs.
