Try holding the iPhone in landscape mode with the Airport Utility Open. Click Wireless Clients, then try to replicate the antenna problem. You should see a huge signal drop here in the form of hard numbers, it hasn't been talked about much but WiFi is ALSO infected with the curse of the death grip.
Let me add, I believe ALL iPhone users are effected, but those closer to towers are worse than those farther away. I think the bumper is better looking in person than is given credit for. An ultimate solution is a bumper + wrapsol or one of the other iPhone shields. If you need more protection - go with a case-mate hard case... Those rock!
Anyway, I don't think much can be done with a firmware fix, however they might be able to tweak the "signal range" when the phone notices a sudden drop. I think it might be able to do some frequency manipulation also... Beyond that, yes, touching the antenna is a no no, theres no real fix other than going to an iPhone 3G or 3Gs.
Apple will come out with a fix, in the meantime, just relax and open a cold one!!!
