iPhone 4 with 4.1 - Springboard Reset Itself?

I have a jailbroken iPhone 4 running 4.1. As I was going through my apps today, I noticed a blank space in between all of the icons. I thought it was odd so I restarted the Springboard, and when it loaded back up, it reset the way all of my apps were. How can I get them back to the way I had it?

I tried doing a restore in iTunes but I will not be able to continue unless I update to 4.2, which I don't want to do. I also tried doing an option + restore and after successfully locating my backup, iTunes wouldn't let me use it.

You might have to do it the manual way and just move them where you want them.

This sucks - I have to put 100 apps back to the way I had them. Great.
