I uploaded a video and selected HD but I can only get it to output at 720p on youtube... is there a setting I need to activate to get it to upload to 1080p?

How absurd. Why would Apple enable 1080p and not make it easy to upload in that format? They could easily prompt the user asking if he prefers 720 or 1080 when HD is selected. That way, he can choose 720 if he has to use HD but is in a hurry.
 
They need to do some serious update to that YouTube.app.

The YouTube app has gotten some updates, but it isn't the limitation here. The limitation lies with the MediaToolbox.framework and its upload file limits.

Agree. It would be great to upload 1080 via the youtube app, hope they come up with a fix.
