This might be a daft one, but I've not seen an answer on this yet.

If the iPhone 4S has no option to switch off 3G, does that mean it can only use 3G for calls also? What would happen if I tried to make a call/text in an area with no signal? Or is the ability to fall back to 2G/GSM still there?

The lack of an option to switch off 3G in preferences concerns me.
 
Rumour has it that its simply down to a new qualicomm chip that doesn't allow the switching off of the 3G antenna specifically but yes ... the iPhone 4S can and does utilise any lower spec network that it needs to in a situation, just you cannot directly deactivate as you could before

Thank you for the confirmation. 3G seems very patchy on Giffgaff (O2) and I'm debating the upgrade.
 
Yes it will still behave like a normal phone

Just today it switched to 2g whilst I was on the phone and travelling in the car
