1. Does anyone know if you have to be home or will they leave it?
2. Do you know if they will narrow down the time? Right now it lists by 3pm. Does that get more refined as it gets closer?

Read the preorder threads. This has been answered literally hundreds of times.
 
If you ordered through Apple, you can print out a form and pre-sign for delivery. Aside from that, you will need to be home to sign for delivery. They will make multiple attempts before sending it back to Apple. As far as timing goes, no it will not become more refined
 
and all bets are off when it come to time of delivery. If residential, it could be 9pm or later if it was like the 4 and 4S.

Depends on the shipper.

Who's shipping yours? Apple? AT&T? Sprint? Verizon?

AT&T is not requiring a signature, according to multiple of their CSRs, and also FedEx when I called and asked (and gave them my tracking number).

AFAIK, Apple does require a signature, although in your shipping confirmation email, there is a link for you to be able to pre-sign for it.

No clue about the rest, but like iamthekiller mentioned, there is a thread for pre-orders for each of the carriers that should have that info. Just open the thread, click the "Search this thread" link, and look for signature.
