I've had the iPhone 5 since launch and it worked great for a month or two then frequently started going to no service. I went to the apple store and got it swapped. It seemed to work fine until now, I keep getting no service again. I'm thinking of going to the apple store again and swapping it out, do you think they will let me switch for a black one if I have the white?

In short, no.
In long, no because you're not doing a retail exchange, you're doing a genius bar exchange. Genius bar exchanges only let you get the same model you had before (except that they started replacing 3GS's for 4's and 4's for 4S's).
