It's charging through the wall socket, and went from 34% to 54% in an hour? My 4s does that in 15 mins! In fact, the 4s was at 0%, and charging through USB at the same time, is now at 57%. Is this 5s normal?

Your 4s has a smaller battery, so would charge up faster.

I charged a 4S and 5s two days ago from 0% side by side and they both charged at about the same speed. (They both died in me overnight prior to doing that. I think iOS 7 still has some bugs)
 
Mine takes about 2hrs to charge from totally empty to 100%, but I've noticed several times now that the % will drop to 99% after being unplugged for a couple of minutes. Powering off the phone and restarting puts it back to 100% where it'll stay for an hour or so with little use.

I suspect the battery % reporting is a bit buggy right now.
