As of yesterday, my email hasn't been updating even when I try to pull the mailbox down to have it done manually. The bottom of the screen shows that email was last update Yesterday.

I've logged into the email accounts to check there were new emails and the passwords were still correct. I haven't changed any settings on the phone, and haven't updated the phone lately either.

Any ideas?

Force close the mail app and relaunch it. If that doesn't help, hold power and home button until you see the Apple logo then try again.
 
In my previous workplace, I saw plenty of those incidents daily, especially with Verizon's email servers. The solution was to delete the mail settings/registration from the Mail settings pane, then re-setup the email account. Worked a treat many times.
