Able to disable TouchID?

A question for people already using an iPhone 5S: are you able to disable this TouchID and instead still secure your iPhone the old fashioned way with a PIN?

Here's a link from the German CCC:

My 4S is getting a bit old and worn out and I was thinking about buying a 5S, but I have to say that this so called 'security' has left me feeling very uneasy.

"We hope that this finally puts to rest the illusions people have about fingerprint biometrics. It is plain stupid to use something that you can´t change and that you leave everywhere every day as a security token", said Frank Rieger, spokesperson of the CCC.
Indeed it is!
