My iPhone 6 battery now barely last 4 hours of use. I have seen it jump from 50% to 20% in a blink, and it sometimes just shuts down.

When I bought it into the Apple store they said I had to do a complete restore from fresh with no back up, but I really don't want to do this as I have hundreds of apps installed, all set up how I use them and it is going to be a massive pain to re set up. I also have terrible internet so restoring from an iCloud back up usually takes most of the day.

Has anyone been able to convince an Apple Store employee to swap their phone without restoring it when it comes down to battery issues.

Sounds like your battery is shot. Apple Store will check the battery health and if you need a new one and are under warranty, will replace the battery for you. If you are out of warranty a replacement battery is $79.
