Decided to go smaller and back to a trusty 5S. Is it possible to restore the 5S from my recent 6 Plus backup?

Providing the 5S is on the same version of ios as the latest backup on the 6Plus - Yes.

Exactly. If your 5s is on a previous version of iOS, it will need to be updated prior to restoring from backup.
