So this has never happened to me before (pretty sure) so I am wondering if this is a bug. Maybe someone on here can enlighten?

If I use 2 fingers to "pull down" my screen to launch the spotlight search, my screen turns gray. See attached. I do not have "grayscale" or "invert colors" turned on. When I start typing, icons show up on the left side in color and are not very legible. The screen is fine in all other uses.

Is this normal? I am not worried - just surprised as I never saw this before. Thanks!

Yes that is a bug.
Also, you only have to use one finger to swipe down to use spotlight search.
It won't occur after you have done something e.g. open and close a folder.
 
Go to Settings / General / Accessibility / Increase Contracts.

Try enabling 'Reduce Transparency' and than disabling it.

This should resolve it without a restart.
 
I've had that happen occasionally too. Restart your phone by holding down the sleep/wake button and the home button for several seconds.
 
I was really disappointed in iOS 8.1. It didn't fix this bug, the Safari keyboard freezing bug, or all the rotation bugs.
