So I've got an iPhone 6 and was wondering how can I mirror my screen to the screen on the media unit in my car? Do I need various adapters and cables?

If your media unit accepts HDMI input you could use the Lightning to multimedia adapter.

Just hook one of these up to the headphone jack…

What do you mean mirror? Mirror in the same way AppleTV mirrors your iPhones image to a display through wifi?
Auxiliary cable is for audio not video data.
Give us more information on your car, make model (carplay?), aftermarket CD/DVD receiver? Also what are you trying to achieve?

Apparently I can play video through my Hyundai Veloster via the aux port. I want to mirror my iPhone to my screen. I've got a jail broken phone that has CarPlay on it.

From what I've read you can only play videos through that aux port, so mirroring may not be possible. It would probably be best to find the answer to your question on a site devoted to the Veloster.

I just purchased a HDM to RCA converter box and try the following: iPhone -> lightning AV adapter > hdmi cable> converter box > RCA to aux > to the car

RCA?? Are you going from HiDef to crap quality? RCA connector means that you are outputing a Composite video signal, which is horrible as you are downsampling from HD (1920x1080) to about 640x480 interlace or non-interlace.

Mmmm... It makes no sense (not the poster, but the car maker)

Yeah it's a 2013 Hyundai Veloster and the North American models can only play video via the AUX and not the USB which sits beside it which sucks.
