Buy the T-Mobile version from Apple Store (full price). It's unlocked, comes with a T-Mobile sim but just take it out and put your own sim in. Voila.

If the T-Mobile version isn't available in the Apple Store, the AT&T or Verizon versions will work, too. Just tell them you want to buy it "device only." Don't mention "unlocked" as it might confuse the sales associate.

There's a website called istocknow.com where you can check supplies at local Apple Stores. Supplies are still tight, but they are steady and, at least around me, the Verizon ones are in fairly steady supply.

Even if you get an AT&T model (all same internally), it is unlocked.

Bought my 6+ 64 contract free from Barton Creek a few weeks back.

restored the firmware over iTunes and got the splash screen 'congratulations your iPhone has been unlocked' :D -- you might have to do this to solidify the unlock or kick it into effect

Barton Creek has a GameStop in the same mall fwiw

..though, it's not an outdoor mall like Domain

If it's straight from Apple, you shouldn't need to restore from iTunes as it is never locked in the first place. I think even if is unlocked by the carrier that the iTunes step isn't really necessary.
