iPhone 6S (model A1688) on Boost Mobile?

Hey guys, I'm in need of some help/clarifications. My girlfriend and I lucked out this morning and managed to snag a Sprint 6S for her with the intent on using it on Boost Mobile. We were originally gonna go with the Apple upgrade program, but due to some unforeseen issues, we ended up buying the phone outright. Now, we heard that this year, all 6S's are supposed to be factory unlocked (especially if purchased outright), and the only thing we need to do is pop in the SIM card. We asked two different Apple reps and they both confirmed that to be true.

So while the lady is at work, I figured I would go ahead and set up the phone so all she has to do is pop in the Boost Mobile SIM card when she comes home. But the first thing I noticed as I go through set up is that apparently the phone is already activated to Sprint with its own number and everything. Is that normal? Because I figured the phone would come in a blank no-carrier state until we put in her Boost Mobile SIM card. Neither of us signed up for a new Sprint plan. Does Apple sign you up to a carrier automatically when you reserve a phone, or is this something like a holdover until we insert the Boost Mobile card?

Also, looking at the Apple LTE band support site (https://www.apple.com/iphone/LTE/), apparently model A1633 is listed to support Boost Mobile but A1688 (which is the one we bought) is listed to only supports the big four postpaid carriers. Yet both models pretty much seem to share 99% of the same bands except for 30. We asked an apple rep last night and he recommended the Sprint phone. Did we screw up and get the wrong model? Or will A1688 work just fine?
