I've noticed that when I tap the screen to focus on a specific spot, adjoining areas and areas on the same plane, but outside the focus box are gradually very blurry. Am I correct to assume that pics taken with auto focus will look sharp all over the pic vs just one spot.

Take the pic i posted below. I tapped the screen to focus on the label which is sharp, but lettering just to the left on the side is blurry and out of focus. Not to mention the top of the extinguisher by the nozzle is so out of focus, it reminds me of the 7 plus portrait mode lol.

Is this how precise the focus really is? Wasn't able to get a chance to retake the photo without tapping the focus to get a comparison shot.

I guess that makes sense. Here's two pics I just took. One is tapped to focus on the boost gauge and the other was auto focused on nothing in particular. Difference being the boost gauge being in total focus, other gauges blurry vs all gauges in somewhat focus, near and far. However, the fuel gauge seems much more blurry when compared to the others on the same plane.

Looks like the focus was nailed in the first shot on the gauge, as you wanted. The second shot you will notice the same gauge is a little out of focus while the background gauges are a little sharper than the first shot. In the 2nd shot your camera looks like it averaged it out with the focus between the single gauge and the background gauges.

Like I said there is nothing wrong with your camera from what I see.

I don't know if this is much help, from my iPhone 7 plus 1x zoom. Focused on label, I don't notice any blur, just a lot of glare from glass

I think Newtons Apple is correct. That second shot is perfectly taken, where as the first one is blurry. So perhaps it is just a focus on the camera.
