Just thought I would share this info in case some folks didn't know. I bought two T-mobile phones direct from Apple and got a scare when I turned one one to discover it wanted me to activate it through T-Mobile, even if you take out the T-Mobile Sim prior to booting first time. I'm in South Korea (contractor) and that really would be a pain in the butt since I'm not a T-mobile customer..and the gnarly time difference/inconvenience.
To get around this, just hit next till it asks you what you want to do with to phone, set up as new or restore from backup. I chose the restore and it says to plug into you PC/iTunes. I did my latest restore, dropped in my Olleh Korean Sim and was good to go. On my wife's I dropped in our local sim prior to first boot and it still wanted T-Mobile activation. But after the restore she was good to go.
