I’ve never understood the benchmarks everyone talks about. Can anyone give me more information on it ?

Benchmarks run a series of tasks of different types to give a figure that can be compared across systems.
For example, your phone will do certain calculations, converting a 1080p video from one format to another, generating however many polygons at a certain resolution.
How well these figures translate to real-world speed is often a topic for debate, especially when comparing phones that run on a different operating system, but it gives you SOMETHING to compare.
Download Geekbench I guess.

In short, its essentially a measurement of performance of processors and processor cores. The devices are rated to show how they stack against other competitor devices or previous iPhones.

How is useful you ask? I don't know that it's really useful. It's just a way of showing you where your device currently stands in terms of processing power. It's more of a scale or measurement for the sake of seeing how the iPhone ranks. Overall, everybody's experiences will differ, because everybody uses their phone differently.
