I'm thinking about an iPhone, but I watch a lot of videos with chapter markers in them, and use them to navigate (particularly watching fights and such, I often want to skip to the bout I want to see....)

I know that the 5G iPod supports those chapters -- no display of the name, but you can move to the next chapter with a press of fast forward -- so I assume the iPhone also supports them, but I want to be sure.

Does the iPhone support chapter markers in H.264 .MOV files?

Yes, yes it does. I just used handbrake to compress a DVD's Video_TS folder, I set it for iPod low-rez, which compressed it into a H.264 mp4 and it indeed had chapter skip.
