iPhone and iTunes sync confusion

Hi,

I have an iphone 4S and use a windows laptop with itunes. I also have an iPad first generation. I use iCloud to sync photostream, calendar, contacts, etc.

My questions:

1. How do I get the videos and voice recordings from my iPhone to my laptop?
2. I have 150 ebooks. How can I sync specific ones to my iPhone and different ones to my iPad?
