iPhone apps rearrange themselves after updates???

Hi all! Looking for some help...

Every time I update my iPhone via my Mac or even update apps via app store app on iPhone, all my apps rearrange themselves??? I only prefer a few folders and have over 8 pages of apps. How can I ensure they will remain in their preferred order/folders after my next update?

Are you jailbreaking? If using something like five icon folder that isn't available after restore so the folders overflow. If not do you have the page in itunes where you can organize the apps turned on?
