iTunes shows my apps for my iPhone taking 853.6MB....is that normal? I assume that there would be a little extra space used for prefs, saved data, etc. but is that it? It seems like a very large amount...

Well how many apps do you have installed and what apps do you have installed? Some of the apps can be quite large when upzipped/unpacked.

I have 44 apps + the 21 default Apple apps. The only really big app that I have is the Apple Texas Hold 'Em game which weighs in at 129.1 MB according to iTunes. Everything else is relatively small.
