iphone backup problem!

I received a brand new iPhone 3G 16GB through my insurance company.

I plugged it into my computer and it said the software version was 2.2.1 so I could not restore from backup and I must install the most recent version to continue.

I restored to 3.0 but now I cannot find where to restore from backup.

Any ideas please?

I wouldn`t recommend restoring from a early backup then a 3.0 backup. What is it that you are missing in the earlier backup?
