iphone backups

I seem to have deleted all my sms messages and it happened before I last synced with itunes. theres no way to retrieve older backups its always the most recent one?

If you're using a Mac and running OSX 10.5 and have the Time Machine Backup facility active then yes you can go back in time and restore the older backups. But i'm guessing you don't meet all of this criteria and therefore your recent docking has overwritten the backup file with the new backup file.
