Hi,

As I have purchased my iPhone 6, I was going to use my old iPhone 5 for access to 'hey Siri' in one room. This would mean that the iPhone will be plugged into power 24/7.

My question is will this damage the battery for long term. Eg if I decide to sell the iPhone later will the battery be dead?

Yes, keeping a phone,computer or other device plugged in 24x7x365 will certainly degrade the battery's life expectancy.

I think your best bet imo, is to sell it now, rather then later, just because the valuation is only going to decrease anyways, i.e., get what can now.
 
Yes...bad for the battery in the long run. Then again, it takes 5 minutes and 5 bucks to replace the iPhone 5 battery so whatever floats your boat, I suppose.
