I have an Iphone 4S, I have a iMac with an address book.
I typically collect numbers/contacts from people with my iphone and then transfer it to my address book when i sync etc.

I don't ever want to delete any address/contact from my address book on my mac....i only want to add to it. I however do not want all 300 contacts on my phone given 1/4th of them I never talk or text with.

How do i do this?

As it is now, every time I delete a number from my phone while also adding numbers...it forces me todo the same on icloud or itunes when i sync
 
If you had a CardDav, LDAP or Exchange server account that you could add to your Address Book and iPhone, you could keep that separate from all of your other Address Book contacts.
