When you make a note in mail, and try to set a to-do it give you a message.
It says something along the lines that if you convert it that it will not be compatible with the iPhone. Does this mean that you can sync to-dos and notes to your phone some how?

hopefully I searched enough..

This is something that is not currently supported on the iPhone.

Most likely, this will be in an iTunes update that will be arriving along with the European iPhone release.

We certainly know that there will be an iPhone update prior to that date as the international keyboard support that we have seen in the UK Demos is not present in the US release. Note the ability to change keyboard layouts on the fly.

Notes and To Dos are sent to your iPhone now, and they are in non rtf format.
To dos are in the iPhone's Apple mail to dos and your notes come up in the imap mailbox you wrote them in on your computer.
