My iphone volume button, sleep button and head phone jack stopped working. Then two days later; after leaving it over night to charge on a chinese made wall charger (just bought) it wouldn't turn on.

Now, the problem could be connected to the first issue, or a second issue caused by a cheap charger (bad idea in retrospect).

I was given a 8G iphone with a cracked screen. Swapping the screen seems straight forward enough, but my question is: Would it be possible to swap out the hard drive in the 8g for my old 16G~

I thought there would be a ton of info on this but I haven't found it yet~

It is not possible. The memory chips ("hard drive") are soldered to the logic board and cannot be upgraded without switched out the whole logic board.
 
It's a memory chip... not a hard drive :p

And like mentioned, no you can't change it unless you know a thing or two about soldering and chip swapping.
