iPhone has music that iTunes doesn't

I have synced my 3G to iTunes 10 and I keep running into music that is on my 3G that has disappeared from iTunes. iTunes has the exclamation point and tells me to "Locate" the music. Where are these songs going? I search for them using different info in Spotlight and can't find them. Can I get them back on my desktop from the 3G?
