Do they sell and adapter that would allow me to plug my iPhone earphones into my iPod touch? Basically I would be using the recessed headphones that fit an iPhone on a normal jack like an iPod touch. I want to do this so that I can use the microphone and song controls on the iPod touch.

They use the same headphones.
 
they fit the same jack, but the sound is off. maybe its an issue with the headphone quality but i figured it was something with the recessed headphones not matching the normal jack in the correct way.

I'd say your headphones are definitely not working correctly. But the iPod touch 32GB and 64GB come with exactly the same headphones at the iPhones do. The plugs have 3 rings on them, instead of the usual 2 rings on plugs with no controls or mic them.
 
skiltrip should be right. My brother used my father's headphones from his iPhone for some time when his original iPod touch headphones got wasted. He never complained that they were not working.
