My girlfriend knows my apple Id and password and she just got a 2nd iPhone. I saw her doing an icloud restore on it and it looked like she might be trying to restore from my icloud.

If she did that she would see all my texts and everything right?? Is this a sneaky way to spy???

If that is so and where you I would give her a kick in the behind.

Texts like in SMS are not synchronized but notes for instance do.

imessage texts would probably sync though and still show up. Sharing apple Id's is a really bad idea and IOS6 has caused people to have more "sharing mishaps"
 
If she has your password it's not "hacking". It's just using.

That said: time to talk to your girlfriend. Perhaps she doesn't know any better. I know lots of folks who don't understand how appleIDs work etc.

(sigh) that's not a hack... It's your GF knowing your log in information. Yes, conceivably she could do that, if you're really worried change your password. What made it look like "your" icloud?
 
That might be the least of your worries. If Find My iPhone is enabled she can track where you are at all times.
