A friend of mine has a white 16GB iPhone 3G (this is her third after having many issues with the 2 previous). I have the same model only black. She uses Vista, I have Leopard. She seems to ALWAYS have issues with her phone, more notably her updating 2.2 has barely even progressed and it's been updating for 2 hours.

Mine took a while but not nearly that long. It seems the only difference is the operating system. Can anyone offer any advice or similar situation if you are using Vista, or know someone that does?

Nobody else likes Vista and neither does the iPhone. When I switched my wife's iPhone over to the iMac from her Vista laptop....all of her syncing problems went away. iPhone has a cut down version of OS X on it, so it would make sense for it to work better with Mac OS X than Vista.
