I bought an iphone with 1.1.4 firmware already sim unlocked and jailbraked with installer. Now, iphone started acting up and it's not uncontrollable and I want to restore the iphone firmware with itunes. I'm assuming that if I restore the through itunes not 21/07/2008 it will install 2.0 firmware. Pwnage tool was already relased so I could use that. So will that work? Will my iphone be still unlocked to any sim card at the end of it all?

I heard on other websites that if you jailbrake your iphone you cannot update iphone. Is that true? By the way I don not know how my iphone was jailbraked through Ziphone or what else.
 
if your iPhone is the old iPhone, pwnage should be able to unlock and jailbreak.
however, you might want to reconsider, as half the benefit of having a jailbroken phone was installer.app, and that's unavailable in 2.0 right now.

You can just reinstall 1.1.4 jailbroken+unlocked.
