In the PDF file that comes with the .ipsw it says that once you update to 3.0 your phone is locked into that version!

Updating devices to iPhone OS 3.0 beta software. By installing iPhone OS 3.0
beta software on your Authorized Test Devices, these Devices are permanently
“locked” into testing mode and cannot be restored to earlier versions of iPhone
OS.

Ouch!

sure, I just heard something about a two week period of testing, then your phone gets useless if you don't have the next beta..
