iPhone mail and Mac mail syncing issues with Gmail

I have an android phone and whenever I read/delete/archive an email the exact same happens in the mail app on my mac.

When I attempt to do the same on my iPhone it syncs the delete/archive to my mac's mail app but doesn't sync 'read' emails.

Why not?
