Quick question, I am pretty sure the answer is yes, but does the iPhone need to be jailbroken in order to have a mirror image of the iPhone on a screen? (not TV out for youtube, movies, etc but with see in the apps and everything)

No. There's a developer tool called iSimulate that will do this - it requires the iPhone SDK and separate video capture software for your Mac.
