Iphone missing major features

My iphone has a really weird glitch and is missing major features. My IOS is 4.2.1 and it is jailbroken.


In this picture, instead of having the traditional two buttons at the top, "cancel" and "done", it has nothing.

In this picture, instead of having the tradition "ON" and "OFF" letters, it says nothing.


In this picture, when you "hold" your finger on a link, you should get options like, open, open in tab etc. But in this picture it doesn't say those words.


In this image, the black boxes should say "cut" and "copy" and they dont' say that

In this image, there are no two buttons on the top corners.

Sounds like you need to reinstall the iOS and re-JB.

Could you tell me the whole process of how I can back up my cydia apps, restore the phone and still keep my IOS 4.2.1. I'm a noob at jailbreaking and the help would really be appreciated.
