iPhone Overseas (One thread NOT about iPhone 3GS)

At the end of this month, I am traveling to Europe (France & Spain) for 8 Days. I want to bring my phone and be able to make calls and text back to the states. I don't necessarily need data.

Once I get there, how do I lock into a carrier and stuff like that? Do I have to call AT&T to enable it or something?

I just need someone to point me in the right direction.
I have the iPhone 3G, if that makes a difference than the original iPhone.
