This issue has been plaguing me since iOS 11. I have done factory restores with and without backups and even a DFU restore with both iOS 11 and iOS 12. The issue remains.
After many hours of usage, typically late at night around 3 am or so I enter into standby mode and use the iPhone again, everything on my display becomes much smaller, including the keyboard. I have to go to my Settings and change enable ZOOM in the Display and enable Large Fonts, plus slide the bar to make the text larger.
Come later morning after the iPhone has "slept" for 8 hours, everything is back to normal and the text size is now much too large and I have to go back to Settings to reset the text size, disable Zoom, disable Large Size texts.
This is very annoying especially when I travel on a plane. Changing the time doesn't make a difference. I also tried to enable and disable Nighshift with no effect.
