Been hunting around a bit but can't seem to find any mention of it yet.

My wife has the iP7+. I'm still on an iPhone 6. Both are on iOS10. When I send her a screenshot via iMessage, it shows up like you'd imagine. Fills up the screen, opens like a photo, etc. However, when she sends me a screen shot, I get this scaled down, compressed photo that no text can be read on.

I've had friends on iP6+ and iP6s+ send me screenshots as well, one was on iOS9 and the other iOS10, no issues. I've looked for a setting on my phone, but I'm pretty sure it's her phone that is the culprit. It only matters because she sends me screenshots quite often with things to do, grocery lists, etc, so we do use that regularly.

Any ideas?
 
I believe you can now turn on data saving in messages which compresses sent images. Might want to have a look through your wife's settings.
 
On your wife's phone try going to Settings>Messages and scroll all the way to the bottom and see if "Low Quality Image Mode" is turned on.
