Randomly I'll send a link to a YouTube video (via text message) and my friend opens it to get a different video then I sent. On a separate occasion I was sent a YouTube link and it was the video intended. Opened later on in the day I got a completely different video. It wasnt like the video was removed it directed me to something completely different.

Are you assessing youtube through your browser or through the app?
 
I use the app and hit share via email (since there is no via text message option) then copy and paste the link in a text message.

It would be much easier to share a video without any bugs through safari. This is interesting thought I will look into whether or not I encounter this error.
