iPhone single plan, upgrade, then add phone's as family plan?

So I have an original iPhone 8gb and I am eligible to upgrade to the iPhone 3GS. My question is, if I want to upgrade to the iphone 3gs on friday, and then change my account to add 3 more iphones 3GS's as a family plan, do you think the apple store would be able to do all of this on friday launch day? Also do you think I will be able to keep my number during this process (i want the same cell phone number)?
