I've always just done the restore from iCloud back. Just helped my sis. do a new device ip to ip transfer (she doesn't have iCloud). Anyhow, I was always assuming this was based on BT like the apple watch updates, but the transfer went pretty quick. I suppose when you scan the QR image, etc via IP to IP transfer, it also adds the WiFi profile to do the transfer over WiFi. Can anyone confirm ?
 
It’s using a direct connection between the two devices via Wi-Fi. This is also how the watch is doing it too (Bluetooth for data transfer is incredibly slow).

When you copy over data from one iPhone to a new one like that, it restores *everything*, including every setting. So yes, saved Wi-Fi networks are transferred as well.

Ah, interesting. So I assumed it transferred via the internal -wifi- of the residence but based on you post, its a peer-2-peer to each other direct.

When the watch updates used to -be slow-, I recall threads suggesting to 1st let the app see the watch, and during uploading or to that effect, turn off BT and it will force it to WiFi . But BT was primary communications means between the 2

Data transfer between new iPhones during a new phone setup is phone to phone Wi-Fi. No router needed.
 
There are -differences- in what data get's restored . How are app passwords/usernames brought back when doing ip-ip versus iCloud restore.

For post #5. Back in -the days-, before iCloud restore or ip-ip, one would had to choose -encrypted backup- option in iTunes to bring back certain usernames/passwords/app data/

It's been awhile since I've done a deep dive on data bringing back (in granularity, wifi, app usernames/passwords, etc), but I do recall there was something -encrypted cabled backups- did not bring over vs. doing a iCloud backup restoration.
----Since having of such experience, I've always done the iCloud restore when getting a new device.
