I have an iPhone 3G in the US, on AT&T. I am headed to london next week, and wanted to know if I will be able to insert a prepaid SIM card I pick up in England and have my iPhone work??

Did you buy your iPhone from AT&T or Apple in the U.S.? If so, it's locked to AT&T and SIM cards from other carriers will not work in it unless you have unlocked/jailbroken it. (See the iPhone Hacks forum for information on jailbreaking and unlocking.)
