I just bought an 8GB EDGE iPhone off of EBay.

My question is this: is it possible to use the iPhone as basically a glorified iPod Touch, if you don't have a SIM card/phone subscription?

I currently have a Verizon contract that doesn't run out until June, so until then, I intend to only use the iPhone as an iPod with a camera. Is that possible?

Yep. My retired iPhone with edge works fine, just no phone and no SMS. Camera, Calendar, etc works great! You just don't get anything that worked off of cellular service.

Wi-Fi and whatnot all work great. :)
 
Yup, if you get it and its restored (meaning it'll want you to connect to iTunes) just jailbreak/activate it and you'll be good to go.
 
You'll need some way to activate it to start using it and the only way to do that without a SIM would be jailbreaking. Otherwise you'll get stranded on the Connect to iTunes screen I believe.
 
You can have an activated first gen iPhone running stock if you want. Here's how I do it. It involves jailbreaking it at first, but then you un-jailbreak it.

1. Download firmware 2.2
2. Restore to 2.2 in iTunes
3. QuickPwn to jailbreak it.
4. *Update* to 2.2.1 in iTunes
5 All done.

The update process will keep the activation, but will overwrite the jailbreak.
