Yesterday I restored my iPhone, and now when I come to put something on it, it won't take it, it has photos and apps on it already, but in iTunes it tells me that my phone just has "other" on it, does anyone know what's gone wrong?

I'm assuming that your phone isn't JB'd. I'd try a full DFU restore, looks as if you have corruption there:http://osxdaily.com/2010/06/24/iphone-dfu-mode-explained-and-how-to-enter-dfu-mode-on-your-iphone/

Oh bloody hell, haha, again? Ok, what could I have corrupted?

And no, it's not JB'd

I had this. I just disconnected the phone and then re plugged back into iTunes then all was ok.
