every few days my x slows down to the point where it is useless. I have to reboot the phone then it is perfectly fine again, for a few days.

Already done a full dfu restore. No change.

At this point I don’t know what it could be. Is there any way to get cpu utilization reports via console monitoring? Or any other way to figure out what’s eating my device cpu?
 
Since you have done a restore several times, most probably it's a hardware failure. But of course only if you have done a setup as new after the restore. If not, than setup as new and if you still have the same problem, Apple store it is....
