iPhone's 1.1.4 having questions on restoring & update

Lately my iphone's been VERY sluggish & I think I just need to restore it, but when I click on ITUNES restores it wants to upgrade me to the newest versions afterwards.... that's bad, obviously.

How I restore -> then upgrade to anything above 1.1.4?
I have ZiPhone & WINPWN but not sure how to get this thing done.

Just upgrade to 2.1 then use the tools available to re-jailbork.

- build the custom ipsw using pwnage tool
- open itunes.
- connect phone
- shift click restore and select the custom ipsw.
- done

I keep trying to run WINPWN... but as I'm doing the press & hold power then power & home button... it says congrats & starts the progress bar to "create custom whatever...."

then it CRASHES!!!! wtf!!!
